Apple & Pecan Oatmeal

I am one of THOSE people who eats oatmeal year round. I have oatmeal for breakfast at least once a week. I eat an oatmeal breakfast nearly everyday during the colder months! I can’t wait to share all of my favorite oatmeal toppings with you this fall and winter.

Being that it’s fall, I can’t help but think of apples and cinnamon! I usually pair the two with walnuts but, I went with pecans this time around.

Mmhmm, that is my Harry Potter mug in the background. I always have at least one cup of coffee before making breakfast…I mean, knives and fire are usually involved. 😝

Apple & Pecan Oatmeal | Recipe

  • 1/2 cup of steal cut oats
  • 2 cups of water
  • 1 small to medium apple
  • Handful of pecans
  • Maple syrup, brown sugar and cinnamon to taste (see below for my measurement guesstimates).

This recipe makes two servings….unless you are super hungry. I won’t judge. I could probably eat two bowls. 🥰

Boil and then simmer your oats in water until soft. I always use steal cut oats for oatmeal and use the rolled oats or quick oats in baking. Steal cut oats take longer to cook but the flavor and texture is so much better. You can shorten the time by making “overnight oats” by soaking your oats in water, in the refrigerator overnight. If you’re not an oatmeal person, perhaps you should try steal cut oats and then get back to us…If you like very creamy oats, add non-dairy milk.

While the oats are cooking, core; peel and chop your apple into small bite-sized pieces. Add the apples to a pan with a tablespoon of water and cook them over medium heat until soft. Yes, I’m stewing apples in a small frying pan. The larger surface means the apples has constant contact with the pan…they cook faster than if I were to bake them in the oven. 😁Add your cinnamon, brown sugar and maple syrup to taste. I add a handful of coarsely chopped pecans to the pan at the very end. This way, they stay nice and crunchy but get coated with the sugars. The big pecan pieces add great texture.

When it comes to cooking. I rarely measure, especially for things I make often. I judge by taste. If I had to guess on the amount of sugars and cinnamon I used…

  • 1- 2 teaspoons cinnamon
  • 1 table spoon brown sugar
  • 1/4 cup maple syrup

When the oats are done, put them in a bowl and pour the apples over the oats! I sprinkled some brown sugar on the very top, just for fun. Yum!!
