Chocolate Cake For One | Vegan

The perfect cake for that sneak chocolate craving attack. What’s not to love about this easy, vegan, chocolatey goodness? It’s the perfect portion for a one time snack- I’m a big fan of small batch baking. Can’t eat a whole giant cake if you don’t bake one! And let’s be real, it takes some motivation some days to get to the baking.

Chocolate Cake For One

  • 4 tablespoons All Purpose Baking Mix
  • 2 tablespoons sugar
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon vanilla
  • 4 tablespoons coconut milk
  • 1 tablespoon chocolate chips

Preheat oven to 350°. Mix ingredients together pour batter into small ramekin and bake about 25 minutes. Check to see if Cake is done by inserting a fork into the middle if it comes out clean, it’s done! Or, press the middle and if it springs back up, it’s done!

You can also put this into a small ramekin and bake in the toaster over. This is how I do it… it’s like a grown up easy bake oven! I also mix the batter in the ramekin with a fork. Less dishes and since there are no raw eggs you get to lick the fork and then use the same fork to check the cake. Muwhahahaha no extra dishes!!! If you mix the batter in the ramekin and don’t want it to look messy (like mine) wipe down then edges before baking. I honestly don’t care about presentation when the chocolate cake craving strikes!

You could probably microwave this recipe. But I don’t own a microwave so I have no advice for you here. If you figure it out, feel free to comment below…

You could make a tiny batch of icing but I like to let it cool for a couple of minutes and top with powdered sugar. I also like to eat it warm.

    1. I buy coconut milk like regular milk. The carton says 7-10 days after opening. But you could use any milk with this recipe. I know it also works with cows milk too
